“All About Fish” Training Promotes Sustainability and Culinary Excellence
19 January 2016
Columbia Hotels & Catering Academy proudly marked the successful completion of its “All About Fish” training program, designed to strengthen both culinary expertise and sustainability awareness among food professionals.
Led by Chef Trainer Ioannis Giakoumides, the program explored essential topics including responsible seafood sourcing, sustainability in fisheries, and the safe handling, storage, and preparation of fish. The training combined theory with practical insight, helping participants better understand not only how to work with fish, but also why responsible practices matter for oceans, food supply, and customer wellbeing.
Participants highlighted the strong practical value of the seminar. Comments included:
“Very informative and well organised — I learned a lot about fish selection, handling, storage, and preparation techniques.”
“Excellent and very helpful.”
“Chef Giannis is very professional and knows exactly what he is doing — we learned a lot and we are very happy.”
“One of the best trainings I’ve attended on fish — thank you very much.”
“Proper handling ensures safety and quality, and chefs play a critical role in responsible seafood use.”
Evaluation feedback showed consistently high satisfaction, with participants particularly valuing the practical knowledge gained, the relevance of the content to real kitchen environments, and the clear connection between sustainability and professional culinary standards.
Columbia Hotels & Catering Academy thanks all participants for their enthusiasm and commitment to developing skills that support both culinary excellence and environmental responsibility.
